Cottage Cheese Quiche

I had never even tried cottage cheese until recently. It’s been touted as a 2024 superfood given its low calorie to high protein ratio. It may not look appealing but I worked it into a Quiche to make it less eggy (Is that weird given a Quiche IS eggs?!)

COTTAGE CHEESE QUICHE SIX INGREDIENTS

200g cottage cheese
4 eggs
100g broccoli
100g mushrooms
60g spinach (I used frozen)
If you’re the spicy type, add chilli
If you’re feeling a bit salty, add salt!

COTTAGE CHEESE QUICHE METHOD

  1. Oven at 200 degrees

  2. Mix together in a bowl all the ingredients

  3. Chuck it in a pyrex glass oven dish or rectangular cake tin - approx 18cm x 18cm works well

  4. Set the timer for 20 minutes - check on it at this stage, it may need a few more minutes. If it’s almost ready, turn the oven OFF & let it sit in there using residual heat.

  5. Serve with a bitter leafy salad
