Thermomix choc chip muffins

Lunchboxes. It’s been 10 years since my eldest started school & I have another 10 years til my youngest finishes. Will I make it through with 20 years of making school lunches? The prevalence of UPFs (Ultra Processed Foods) have made it super convenient but also detrimental to our kids when it comes to making a balanced lunchbox for 3 kids 5 days a week while juggling that other little thing called life.

I bake things which my kids scrutinise & ask if it’s “healthy” - I have to assure them it’s NOT healthy for them to even consider sniffing or biting a mouse size corner of. So these muffins contain gluten & dairy BUT they don’t fall in the UPF category that we should all be avoiding….so we revert to one of my favourite C words - COMPROMISE.

SEVEN STAPLE PANTRY INGREDIENTS

350g self-raising flour
350g milk
150g butter
75g coconut sugar
2 eggs
2 tspns vanilla extract
200g choc chips

METHOD FOR VANILLA CHOC CHIP MUFFINS

  1. Oven heated to 190 degrees celsius

  2. Butter, coconut sugar & vanilla in the Thermomix. Speed 3 / 70 degrees / 2 minutes

  3. Milk, flour & eggs in. Speed 4 / 10 seconds

  4. Choc chips in. REVERSE Speed 3 / 10 seconds

  5. Tip muffin batter into lined muffin tin - I made each one about 50-60 grams to stop it overflowing (although who doesn’t love an ACTUAL muffin top).

  6. Timer on for 20 minutes

  7. Take them out, bat away the small hands trying to eat them while still scaldingly hot. Flip them out. I froze some for lunchboxes & to stop the kids from eating them all at once
