Cozzie Livs Quiche
I read an article last week that egg sales have gone up significantly in Australian supermarkets - consumers still want their protein hit, but meat is exy….enter the cozzie Livs Quiche…I am not a fan when I read a recipe that says “you probably have all these ingredients in your pantry” but legitimately this one uses kitchen staples. It’s gluten-free & high in protein for anyone counting macros *insert muscly bicep emoji*
CLQ SIX INGREDIENTS
5 eggs (Approx $2.40 - I paid $5.70 for a 12 box of free-range eggs)
200g Cottage cheese (Approx $2.30 - $6 for a 500g container)
185g tin tuna (Approx $4.50)
100g Broccoli (Approx $0.50 - currently $4.49/kg)
100g peas (Approx $0.50 - I used frozen peas which are about $5 for 1kg)
Fresh herbs - half cup. Use what you have - I used a mix of oregano, thyme & parsley from my garden - another cozzie livs bonus of growing your own herbs, cos those MOFOs are expensive & often get wasted.
Total cost = $10.20 - feeds a family of 4 without compromising on quality or cheap fillers /preservatives / additives.
CLQ Optional additional ingredients:
Nutritional yeast
Italian herbs
Chilli - we grow our own so this is another zero cost
Salt
COZZIE LIVS QUICHE PREP METHOD:
Oven to 200 degrees Celsius.
Throw all ingredients in a bowl.
Mix until well combined
Tip into an oven dish of choice
Cook for 35 minutes.
Another cozzie livs tip - if it’s not quite ready at 35 minutes, turn the oven off & let the residual heat finish it off without increasing your electricity bill.
Serve with a fresh green salad - Baby Gem is perfect for that fresh crunch; or rocket for a peppery cut through.
